Low-Carb Chicken and Rice Casserole

4 cups riced cauliflower
¼ cup water
4 cups shredded cooked chicken
1 cup heavy cream
1 cup cream cheese, at room temperature
2 garlic cloves, minced
1 small onion, minced
1 cup shredded sharp cheddar cheese
1 teaspoon kosher salt
Freshly ground black pepper, to taste
1/2 cup chicken broth
1 teaspoon paprika
Preheat the oven to 400ºF. Spray a 9-by-13-inch baking dish pan with cooking spray.
Place the cauliflower rice in a large, microwave-safe bowl along with the water. Cover the bowl and heat in the microwave for about 5 minutes, until tender.
Add the chicken, cream, cream cheese, garlic, onion, salt, pepper, and broth and stir to mix. Transfer the mixture to the prepared baking dish. Sprinkle the paprika over the top.
Bake uncovered for 20 minutes.
