“Sticky rice,” formally called “glutinous rice” (glutinous, not glutenous—there is no gluten in it!), is a special type of short-grain white rice from Southeast Asia that, unlike regular white rice, becomes extra sticky when it’s cooked. It’s delicious and the perfect side for spicy Thai or other Southeast Asian foods. The downside is that it normally has to be soaked for several hours, or even overnight, before cooking. With this Instant Pot recipe, though, you can make it in 20 minutes—no soaking required!
Sticky rice makes a great complement to spicy, saucy dishes like Thai curries. It also serves as the base for the most delicious Thai dessert: Sticky Rice with Mango. You can cook the rice according to this recipe and then heat it in a thickened sauce made from coconut milk and brown sugar. Serve it topped with sliced fresh mango.

Instant Pot Sticky Rice

25 minutes, plus 15 minutes to come to pressure and 5 minutes to release pressure

2 cups glutinous rice
2 1/3 cups water, divided
Put 1 cup of the water in the instant pot along with the trivet.
In a stainless steel bowl, combine the rice with the remaining 1 1/3 cups water. Place the bowl on the trivet.
Close the lid and turn the valve to the sealing position. Choose high pressure and set the timer for 25 minutes.
When the cooking time is up, let the pressure release naturally for about 5 minutes, and then quick release any remaining pressure.
