The recipe below sandwiches marshmallow fluff, chocolate and mascarpone cheese between slices of rich brioche bread. A toasted marshmallow topping and graham cracker crumble ensures that the campfire flavors of childhood s'mores stay in tact.
This recipe is perfect for brunch, as much of the work can be done in advance. Prepare the recipe up to the custard portion, and while the casserole soaks, cover it with plastic wrap and stick it in the fridge for up to 12 hours. Then simply uncover, top, bake and enjoy!

3 tablespoons butter, softened
12 slices brioche
6 tablespoons marshmallow fluff
6 tablespoons mascarpone cheese
8 ounces chocolate, finely chopped
2 1/2 cups milk
6 eggs
1 teaspoon vanilla extract
One 16-ounce bag marshmallows
2 tablespoons melted butter
4 graham crackers, crushed to crumbs
Preheat the oven to 350 F.
Butter the brioche with softened butter on one side. On the unbuttered side, spread half of the slices with marshmallow fluff and half with mascarpone.
Place the fluff-spread slices butter-side down in a 9-by-13-inch casserole dish. Evenly sprinkle with the chocolate, then top with the mascarpone slices, mascarpone-side down.
Whisk together the milk, eggs and vanilla, and pour over the casserole. Let the mixture sit for 20 minutes.
Bake the casserole for 30 minutes, then remove from the oven and top with the marshmallows. Broil for 5 to 10 minutes, or until toasty and brown on top.
Heat the melted butter in a frying pan, and add the graham cracker crumbs. Toast for 1 to 2 minutes, until fragrant, and sprinkle over the casserole.
