1 8-ounce package cream cheese, softened
½ cup confectioner's sugar
½ teaspoon vanilla extract
1 pint fresh strawberries, hulled and cored
1 ounce semisweet or bittersweet chocolate
In a medium bowl, beat together the cream cheese, confectioner's sugar and vanilla until smooth. Transfer the mixture to a piping bag fitted with a ½-inch round tip or use a resealable plastic bag.
Place the graham cracker crumbs in a small bowl.
Pipe the cream cheese mixture into the strawberries (snip off the corner of the plastic bag if using that for piping.)
Arrange the filled strawberries on a serving platter, filled side up. Once all the strawberries are filled, grate or shave the chocolate over the top.
Serve immediately or refrigerate until ready to serve.
