4 boneless pork chops
1 1-ounce packet ranch seasoning mix
3 tablespoons olive oil
2 pounds red potatoes, quartered
Preheat the oven to 475° Fahrenheit.
In a small bowl, mix together the ranch dressing mix and olive oil. Brush about half of the mixture over the pork chops, coating well on both sides. Arrange the pork chops in the center of a greased baking tray.
Toss the potatoes with the rest of the mixture, and arrange around the pork chops.
Bake for 15 minutes, then remove from the oven. Flip the pork chops, toss the potatoes, and continue baking for about 5 more minutes.
