This is creamed corn taken to new heights: It’s richer, cheesier, and hammier! Chunks of diced ham give it flavor and texture. Cheddar cheese and cream cheese make it creamy and addictive. Best of all, this is a mix-it-and-forget-it slow cooker recipe that starts with a bag of frozen corn.
One thing we love about this recipe is how much flavor it packs with just a few ingredients. But we also love that it is endlessly variable. Add diced jalapeños or fire-roasted mild green chiles, diced or roasted red bell pepper, cayenne or chili powder to amp up the flavor. Stir in a bit of sour cream for added creaminess. Or boost texture and even more flavor by crumbling cooked bacon over the top instead of or in addition to the ham in the recipe. You really can’t go wrong.

Slow cooker ham & cheese corn

2 cups diced ham
1 (24-ounce) bag frozen corn
1 onion, diced
8 ounces cream cheese, cut into small cubes
2 cups shredded cheddar cheese
1/4 cup unsalted butter, diced
1/2 cup milk
1 teaspoon salt
1/2 teaspoon ground black pepper
Chopped parsley (optional)
In the slow cooker, add all the ingredient. Stir to thoroughly combine.
Cover and cook on high for 2 hours or on low for 4 hours.
Serve hot.
Garnish with chopped parsley if you like.
