With only five ingredients and 15 minutes of prep time, this satisfying chicken recipe is destined to become a favorite in your house. You slow-cook potatoes and chicken together, flavored with melted butter and ranch seasoning mix. Cooking dinner doesn’t get much easier than that.
Even though this recipe has only a few ingredients, the ranch seasoning gives it plenty of flavor. Serve it with a green vegetable like steamed or sautéed green beans for a complete meal that's both satisfying and nutritious. Your family is going to ask you to make this dish again and again!

Ranch chicken with potatoes

2 tablespoons vegetable oil
2 ½ pounds chicken thighs, bone in, skin on
Salt and pepper
2 pounds new potatoes, cut into 1-inch cubes
1 1-ounce packet ranch dressing mix
3 tablespoons salted butter
Heat the oil in a large skillet over medium-high heat until it shimmers. Season the chicken with salt and pepper and cook, until browned on both sides, about 8 minutes.
Arrange the potatoes in an even layer in the slow cooker and sprinkle half of the ranch seasoning. Pour the butter over the potatoes, and then top with the browned chicken thighs. Sprinkle the remaining seasoning on top of the chicken.
Cover and cook on high for 5 hours.
Serve hot.
