Forget takeout. Make delicious slow cooker garlic chicken instead

This is one of those just right slow cooker meals. It’s easy to toss together and loaded with two of our favorite things — butter and garlic. Oh, and did we mention it has tender potatoes and carrots cooked in the garlic butter right along with the chicken? Like the chicken, the vegetables take on the rich, aromatic flavors of butter and garlic.
Set up this meal in the slow cooker in the morning so you can come home at the end of the day to a perfectly cooked, one-pot meal. Add herbs or spices to give it even more flavor. A sprig or two of rosemary, thyme or dill would take it to the next level.

Slow cooker garlic chicken

2 pounds boneless, skinless chicken breasts
1 pound carrots, peeled and cut into 2-inch lengths
1 pound new potatoes, halved or quartered if large
1/2 cup (1 stick) butter, melted
4 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon ground black pepper
Fresh parsley, chopped
Place the chicken in the bottom of the slow cooker.
Pour a little of the melted butter onto the chicken.
Put the minced garlic on the chicken, and smear it on each piece.
Add the carrots and potatoes to the slow cooker.
Pour the rest of the melted butter over the meat and veggies.
Sprinkle with salt and pepper.
Cover and cook for 7 hours on low or for 4 hours on high.
Serve hot.
Garnish with chopped parsley.
