Camping wouldn’t be complete without toasting marshmallows. Unluckily for many urban-dwellers, it’s been a while since we’ve seen a sky full of stars or smelled air unpolluted by cars and smokers, or sat around a campfire telling scary stories. Luckily for us, we can still enjoy s'mores!
These gourmet delicacies would be difficult to make on a real trek through the woods, unless you’re hiking near wild blackberry bushes, that is. But if you're making the s'mores from the comfort of your own home, they really couldn’t be simpler. Just make sure you’re ready to eat them immediately, because s'mores are best when they’re still warm and gooey. You can divide this recipe to make just one serving or multiply it for a party. Either way, you’re guaranteed never to have leftovers. Enjoy!

Blackberry white chocolate s'mores

8 graham crackers
2 tablespoons butter, melted
4 squares good quality white chocolate
4 large marshmallows
8 ripe blackberries, lightly muddled
Preheat the broiler, and position a rack on the highest possible rung.
Brush each of the graham crackers on both sides with melted butter.
Break each cracker in half, and top four of the halves with a square of white chocolate. Place these halves on a large plate, and microwave for about 30 seconds, until the chocolate just begins to melt.
Transfer the cracker halves to a baking sheet, and top with the marshmallows. Place under the broiler for about 90 seconds to 2 minutes, rotating halfway to ensure even marshmallow toasting.
Once toasted, remove them from the oven, and top with the muddled blackberries and remaining graham cracker halves. Serve immediately.
