Thumbprints are such a fun, easy cookie to make for a crowd, and these chocolate thumbprint cookies are perfect for Easter. The recipe below is easy, delicious, and festive to boot. The middle of each buttery cookie is filled with a simple chocolate ganache and topped with a candy-coated chocolate Easter egg.
Once you've mastered this recipe, it's easy to change it up. Consider swapping the semi-sweet chocolate for milk or even white chocolate. You could also use pastel-colored candy melts in the filling for an even more festive treat.

Chocolate thumbprint cookies with Easter eggs

½ cup butter, softened

½ cup sugar

1 egg

½ teaspoon vanilla

1 ½ cups flour

¼ teaspoon baking powder

1 pinch salt

4 ounces semi-sweet chocolate, chopped

1 tablespoon butter

24 mini chocolate-covered eggs

Preheat the oven to 350 F.

In a large mixing bowl, beat together the butter and sugar until creamy. Add the egg and vanilla, and mix well to combine.

Sift in the flour, baking soda, and salt. Mix until just combined.

Roll the dough into 24 small balls. Place on a greased cookie sheet. Bake 10 to 11 minutes.

When the cookies come out, quickly press your thumb into the top of each cookie. Remove from the cookie sheet, and allow to cool completely.

Melt the chocolate and butter together over a double-boiler or in the microwave. (For the latter, heat at 30 second intervals, mixing well between each.)

Carefully pour a bit of chocolate into each of the cookies. Top with a mini egg. Allow to cool completely before serving.
