Guests will be begging for seconds after tasting this slow cooker 'no peek' chicken

Slow-cooker no-peek chicken is a classic recipe that always turns out well. It requires just a few common ingredients, and it practically cooks itself. The key to having it turn out perfectly – creamy, rice, tender chicken and a lightly browned top – is to resist the urge to lift the lid to check on it during the cooking time.
After you've made this recipe once or twice, you won't even need to look at a recipe. Apart from the chicken, you can keep all of the ingredients in your pantry. That makes this a recipe that can come to the rescue in a pinch, such as when you don't have time to cook or go to the grocery store. The best part is that everyone loves eating it!

Slow cooker no peek chicken

1. Spray the interior of the slow cooker pot with nonstick cooking spray. This is going to make clean-up dramatically easier, and actually can extend the lifespan of your slow cooker pot's protective finish.
2. In a large mixing bowl, add 2 cups of minute rice.

Add 1/2 teaspoon garlic powder and 1/2 teaspoon pepper.
Add 1 can 10.5-oz chicken soup and 1 can 10.5-oz mushroom soup. We used Campbell's soup, but you can use any brand you prefer.

Next add 1 can of water. You can measure this from one of the empty soup cans.

Stir everything together with a spatula. You should mix until you get a "rice-pudding" texture, as seen below.

3. Spoon half of the soup and rice mixture into the slow cooker. It should cover the entire base of the slow cooker pot.

4. Arrange 4-5 skinless boneless chicken breasts on top of the mixture in a single layer.

5. Pour the rest of the soup mixture over the chicken.

6. Sprinkle 2 packets of onion soup mix evenly over the top.

7. Cover the slow cooker, and cook for 3 1/2 hours on high.
Remember, do not open the slow cooker to check on the chicken during cooking! The "no-peek" recipe works by capturing all the steam inside the slow cooker as it cooks, to steam the rice while cooking the chicken. If you peek, even once, you'll let that precious steam escape, and your rice will likely end up partially uncooked.
8. Serve hot! If you made sure not to peek, the rice at the top should have browned, and beneath you'll find fluffy and moist rice with your chicken.
