Pot roast becomes unbelievably tender when you cook it in a slow cooker. Add a few creamy, flavorful ingredients, and the result is totally mouthwatering. This recipe uses an onion soup mix to make an irresistible gravy that cooks right along with the roast in the slow cooker.
Serve this creamy, oniony pot roast and sauce over mashed potatoes or noodles. Follow the instructions to sear the meat before putting it in the slow cooker for extra flavor. But if you are pressed for time, go ahead and skip that step. The finished dish will be delicious either way.

Slow cooker pot roast with onion sauce

1 boneless chuck roast, about 3 pounds
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons vegetable oil
8 ounces mushrooms, sliced
1 ½ cup of beef broth
One 1-ounce package dry onion soup mix
Season the meat all over with the salt and pepper.
In a large skillet, heat the oil over medium-high heat. Add the roast and cook, turning occasionally, until browned on all sides, about 10 minutes total.
Place the roast in the slow cooker. Scatter the sliced mushrooms over the top.
In a medium bowl prepare the onion soup mix with the beef broth, and pour the mixture over the roast.
Cover the slow cooker, and cook on low for 8-10 hours or on high for 5-6 hours.
To serve, slice the meat, and serve it with the sauce spooned over the top.
