Pot roast is pretty much always a welcome meal — whether it’s a lazy Sunday or a busy workday. Since it can be cooked in a slow cooker while you’re at work, either one is a viable option. You can even make it a full meal by cooking vegetables right along with the meat in the slow cooker. This recipe includes a quick-and-easy rice side that cooks in the meat’s juices while the roast rests.
You can vary the vegetables in the recipe to suit your own taste. Carrots, mushrooms and onions go especially well with the meat. And frozen peas are great because they can be added, still frozen, along with the rice. You could always add or substitute winter squash, bell peppers or green beans.
