In the recipe below, a combination of potatoes, sausage, and bacon are layered together with onions, salt, and pepper. A true Dublin coddle is made with no recipe, as the idea is to toss any and all leftovers into the hearty stew. The recipe below is a good jumping-off point to inspire you, but feel free to toss in leftover beer, cooked meat, or anything else that might marry well with the simple, hearty base of sausage, bacon, and potatoes.​

1 pound thick-cut bacon
1 pound pork sausage
2 onions, thinly sliced
4 pounds new potatoes, halved
2 cups chicken broth (plus more as needed)
salt and pepper
Preheat the oven to 300 F. Heat a pan over medium-high heat and cook the bacon and sausage just to brown. Cut the bacon into 1-inch pieces and the sausage into bite-sized lengths.
In a large ovenproof Dutch oven with a tight lid, arrange the ingredients in layers, seasoning each layer. Top with the chicken broth. Heat on the stovetop until the liquid comes to a boil, then cover the pot and bake for 3 to 4 hours, checking after two hours to add more chicken broth if needed.
