Crushed Pineapple Muffins
Ingredients
1 cup (120g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (115g) butter, softened
3/4 cup (150g) granulated sugar
1 large egg
1 teaspoon vanilla extract
1/4 cup (60ml) pineapple juice
1/2 cup (90g) crushed pineapple
Instructions
1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with muffin papers.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, cream together the butter and sugar until light and fluffy.
4. Add the egg, vanilla extract, and pineapple juice and mix until fully combined.
5. Slowly add the dry ingredients to the wet ingredients, stirring until just combined.
