This recipe has the perfect combination of sweet and tart, and the strawberry glaze adds a beautiful and glossy finish. The bread itself is moist and fluffy, and the strawberries add a wonderful burst of flavor. The best part is that it's really easy to make and requires just a few simple ingredients. So let's get started and make this delicious dessert!
Strawberry bread
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup plain yogurt
1 pint fresh strawberries, diced
For the glaze:
2 cups powdered sugar
2 tablespoons fresh strawberry puree
1 tablespoon unsalted butter, melted
1. Preheat the oven to 350 degrees Fahrenheit. Grease a 9x5-inch loaf pan and line it with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, beat the butter and sugar together until light and fluffy.
4. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
5. Add the dry ingredients to the wet ingredients and mix until combined. Stir in the yogurt and strawberries until evenly distributed.
6. Pour the batter into the prepared pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
7. To make the glaze, whisk together the powdered sugar, strawberry puree, and melted butter until combined. Drizzle the glaze over the cooled bread and let it set for 10 minutes before serving. Enjoy!
