Crust:
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, chilled and cut into small pieces
2 to 4 tablespoons cold water
Filling:
3/4 cup granulated sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
2 large eggs
1 egg yolk
1/2 cup fresh lemon juice
2 tablespoons lemon zest
1/2 cup heavy cream
2 tablespoons unsalted butter, cut into small pieces
Instructions
1. Preheat oven to 375°F (190°C).
2. For the crust, in a medium bowl, mix flour and salt. Using a pastry cutter or two forks, cut in the butter until mixture resembles coarse crumbs.
3. Add water, 1 tablespoon at a time, until mixture comes together. Form into a ball and flatten into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
4. Roll out the dough on a floured surface to about 12 inches in diameter. Place in a 9-inch pie dish, trimming any excess dough.
5. For the filling, in a medium saucepan, whisk together the sugar, flour, and salt.
6. Add eggs and egg yolk, whisking until mixture is smooth. Stir in lemon juice, lemon zest, cream, and butter. Cook over medium heat, stirring constantly, until mixture thickens, about 5 minutes.
7. Pour filling into prepared pie crust.
8. Bake for 35 to 40 minutes, or until filling is set and crust is golden brown.
