Mushroom Swiss Pasta with Ground Beef
Ingredients:
1 lb Cavatappi noodles (you can use any type of noodles)
2 tbsp olive oil
1 onion, chopped
4 cloves garlic, minced
1 lb mushrooms, sliced
1 lb ground beef
1 cup heavy cream
1 cup chicken broth
1 cup grated Swiss cheese
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in a large pot of salted water until al dente. Reserve 1 cup of pasta water and drain the rest.
2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and cook until the onion is soft and translucent, about 5 minutes.
3. Add the ground beef to the skillet and cook until browned, about 8-10 minutes, breaking it up into small pieces with a wooden spoon. Season well.
4. Add the sliced mushrooms to the skillet and cook until they are tender and have released their moisture, about 8-10 minutes.
5. In a separate saucepan, heat the heavy cream and chicken broth until it comes to a simmer. Stir in the grated Swiss cheese until it is fully melted and well combined with the sauce. Season with salt and pepper to taste.
6. Add the cooked fettuccine to the skillet with the beef and mushroom mixture and toss to coat the pasta evenly.
7. Pour the Swiss cheese sauce over the fettuccine pasta and toss to evenly distribute the cheese sauce. If the sauce is too thick, add a little bit of the reserved pasta water to thin it out.
