Slow Cooker Chicken Thighs
- 8 chicken thighs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups baby potatoes, quartered
- 1 large onion, chopped
- 2 carrots, chopped
- 1 cup chicken broth
1. In a large bowl, combine the olive oil, garlic, oregano, thyme, paprika, salt, and pepper. Add the chicken thighs and toss to coat.
2. Place the chicken thighs in the bottom of a slow cooker.
3. Add the potatoes, onion, carrots, and chicken broth.
4. Cover and cook on low for 6-8 hours, or until the chicken is cooked through and the vegetables are tender.
