Smothered Chicken with Creamed Spinach Mushroom Sauce
4 boneless skinless chicken breasts
8 ounces of cream cheese
1 packet of Italian salad dressing mix
8 ounces of sliced mushrooms
8 ounces of fresh spinach
1 onion, sliced
1-2 cups of shredded cheese of choice
Salt and pepper to taste
Cooked and crumbled bacon (optional)
1. Preheat oven to 350 degrees F.
2. In skillet with oil, cook onions until caramelized. Add mushrooms until browned. Set aside.
3. In a bowl, mix cream cheese with Italian salad dressing mix packet.
4. Add seasoned chicken breasts in baking dish. Spread cream cheese mixture over all the chicken breasts.
5. Top with spinach mushroom mixture. Cover with cheese.
6. Bake for 30 minutes or so.
Serve with cooked and crumbled bacon, if desired!
