Blender Lemon Pie
Ingredients:
4 large eggs
1/2 cup (1 stick) unsalted butter, melted
1 lemon, sliced into wedges and seeded
1 1/4 cups granulated sugar
1 teaspoon vanilla extract
1 pie shell
Confectioners' sugar
Instructions:
1. Heat the oven to 350F.
2. In a blender, combine the eggs, butter, lemon wedges, granulated sugar and vanilla extract, and blend until smooth.
