Polish Pasta Casserole
Ingredients:
-1 lb. penne pasta
-1 lb. Polish sausage
-1 onion, diced
-2 cloves garlic, minced
-1 (15 oz) can diced tomatoes
-1 (15 oz) can tomato sauce
-1/2 cup sour cream
-1/2 cup shredded cheddar cheese
-1/2 cup shredded mozzarella cheese
-1/4 cup breadcrumbs
-2 tablespoons olive oil
Instructions:
1. Preheat oven to 350°F.
2. Cook the penne pasta according to package instructions.
3. Heat olive oil in a large skillet over medium-high heat. Add the Polish sausage and cook until browned, about 5 minutes.
4. Add the onion and garlic and cook until softened, about 3 minutes.
5. Add the diced tomatoes and tomato sauce and stir to combine. Simmer for 10 minutes.
6. Add the cooked pasta to the skillet and stir to combine.
7. In a separate bowl, mix together the sour cream, cheddar cheese, and mozzarella cheese.

8. Pour the pasta mixture into a 9x13 inch baking dish. Top with the cheese mixture.
9. Sprinkle the breadcrumbs over the top.
10. Bake for 25 minutes, or until the top is golden brown. Serve warm.
