8 oz. chow mein noodles
1 lb. boneless, skinless chicken breast, cut into thin strips
1 tablespoon vegetable oil
1 onion, chopped
2 cups chopped vegetables (carrots, bell peppers, bok choy, mushrooms)
2 cloves garlic, minced
1 tablespoon ginger, grated
1/4 cup oyster sauce
1/4 cup soy sauce
1 tablespoon sugar
1 tablespoon cornstarch
1/2 cup chicken broth
1. Cook the chow mein noodles according to the package instructions. Drain and set aside.
2. In a large wok or skillet, heat the vegetable oil over high heat. Add the chicken and cook until browned, about 5 minutes. Remove the chicken from the pan and set aside.
3. In the same pan, add the onion, vegetables, garlic, and ginger. Stir-fry for 3-4 minutes or until the vegetables are tender-crisp.
4. In a small bowl, whisk together the oyster sauce, soy sauce, sugar, cornstarch, and chicken broth.
5. Add the cooked chicken back to the pan and pour the sauce over the top. Stir-fry for an additional 2-3 minutes or until the sauce has thickened.
