Crockpot Swiss Steaks
1½ pounds beef round or cutlets
½ cup white wine
1 cup beef broth
2 carrots, diced
1 stalk of celery, sliced
½ onion, sliced
2 cloves of garlic, sliced
¼ cup all-purpose flour
1 tablespoon olive oil
1 can diced tomatoes (14 ounces)
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
½ teaspoon dried thyme leaves
Salt and pepper to taste
1. Place sliced carrots, celery, onion, and garlic at the bottom of a slow cooker.
2. Tenderize the steaks to a thickness of ¼ inch using a meat tenderizer.
3. Season the steaks with salt and pepper (no need to tenderize cube steaks). Take a shallow plate and place the flour in it. Dredge each steak in the flour mixture, ensuring it's coated evenly.
4. Heat oil in a skillet over medium-high heat. Brown the steaks on both sides for approximately 2-3 minutes per side.
5. In the same skillet, add white wine and scrape off any brown bits. Transfer this mixture to the slow cooker along with the remaining ingredients.
6. Cover and cook on low for 6-8 hours, or on high for 4-5 hours, until the steaks are tender. Tip: Thicken the sauce using cornstarch.
7. Serve!
