I still vividly recall the first time I prepared this salad. It was a balmy summer day, and I was in search of something that was both refreshing and satisfying for dinner. I had some leftover chicken and a can of mandarin oranges in the pantry, and that's when the idea came to me. The salad was an immediate success with my family. My usually finicky children asked for seconds, and my husband declared it was the best salad he'd ever tasted. That's why I'm convinced this recipe is worth keeping and recreating - it's a guaranteed way to bring joy to your dining table.
Mandarin Orange Chicken Salad
4 cups cooked chicken, chopped or diced
1 cup thinly sliced celery
1 (15 oz) can mandarin oranges, drained
1 cup almonds, slivered
1/2 cup thinly sliced green onion
8 oz softened cream cheese
1 cup mayonnaise
1/2 teaspoon garlic powder
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper, to taste
In a large bowl, combine the cooked chicken, thinly sliced celery, drained mandarin oranges, slivered almonds, and thinly sliced green onion.
In a separate bowl, mix together the softened cream cheese, mayonnaise, Worcestershire sauce, garlic powder, kosher salt, and freshly ground black pepper until well blended.
Pour the cream cheese mixture over the chicken and vegetable mixture. Stir gently until all the ingredients are evenly coated.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
Serve chilled and enjoy!
