Frozen Key Lime Delight Recipe:
Ingredients:
1 cup of all-purpose flour
1/2 cup of sweetened shredded coconut
1/2 cup of chopped salted cashews
1 cup of sweetened condensed milk
1/4 cup of light brown sugar, firmly packed
1/2 cup of melted butter
2 cups of heavy whipping cream
2 teaspoons of grated key lime zest
1 cup of key lime juice
1 teaspoon of vanilla extract
Instructions:
1. Preheat your oven to 350°F (175°C). In a small bowl, combine the all-purpose flour, chopped salted cashews, sweetened shredded coconut, and packed light brown sugar. Stir in the melted butter until well mixed.
2. Sprinkle this mixture into a greased baking pan. (~10 inches x 15 inches)
3. Bake the mixture for 20 minutes or until it turns golden brown, stirring once during the baking process. Once done, let it cool on a wire rack.
4. In a large bowl, combine the heavy whipping cream, sweetened condensed milk, key lime juice, grated key lime zest, and vanilla extract. Mix well and refrigerate the mixture until it is chilled.
5. Fill the cylinder of an ice cream maker two-thirds full with the chilled mixture and follow the directions provided by the manufacturer to freeze it.

6. Sprinkle half of the previously prepared cashew mixture into an ungreased dish (~7 inches x 11 inches). Spread the freshly made ice cream over the top and then sprinkle the remaining cashew mixture over the ice cream layer.
7. Cover the dish and freeze it for approximately 4 hours or until the ice cream is firm.
