Slow cooker loaded potato soup
Ingredients
1-lb potatoes, peeled and cubed
1 small onion, diced
4 strips bacon
4 cups chicken broth
1 teaspoon salt
1 teaspoon pepper
4 tbsp butter
1/4 cup flour
1 1/2 cup heavy cream
1/4 cup sour cream
shredded cheddar cheese for topping
green onion, chopped
bacon bites or 2 additional bacon strips cooked and crumbled
Directions
1. In a small pan, cook the bacon and onion and remove, saving bacon grease.
2. Add potato, bacon, onion, salt, pepper and chicken broth to 6-quart slow cooker.
3. Cook on low 6 hours (high 4 hours).
3. When slow cooker is almost done, make roux: in sauce pan, melt butter with saved bacon grease. Whisk in flour until well combined. Whisk in heavy cream and sour cream until smooth.

4. Pour into slow cooker and mix together. Cover and cook on low 30 more minutes.
5. Serve with cheese and green onion and more bacon bites if desired.
