Mac & Cheese Casserole
Ingredients:
3 cups uncooked elbow pasta
4 tablespoons butter, salted
2 cans (12 oz each) of condensed milk
1/3 cup preferred type of milk
2 eggs
4 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
Salt to taste
1 teaspoon paprika
Directions:
1. Preheat oven to 350°F. Grease baking dish.
2. Cook macaroni according to packaged instructions and drain.
3. In a large saucepan, melt the butter over medium heat. Once the butter is melted, stir in the condensed milk and milk of your choice. Continue to cook and stir until the mixture is heated through.
4. In a small bowl, beat the eggs. Gradually add a small amount of the hot milk mixture to the eggs, stirring constantly. This will temper the eggs and prevent them from scrambling when added to the hot mixture.
5. Pour the egg mixture back into the saucepan with the remaining milk mixture. Stir well to combine.
6. Add the salt to the saucepan and stir until it is evenly distributed.
7. Reduce the heat to low and gradually add the shredded cheddar cheese, stirring constantly until it is completely melted and the sauce is smooth.
8. Remove the saucepan from the heat and add the cooked elbow pasta. Stir well, ensuring that all the pasta is coated with the cheese sauce.
9. Transfer half of the macaroni and cheese mixture to the greased baking dish. Sprinkle half of the shredded mozzarella cheese on top. Repeat with the remaining macaroni and cheese, and finish by sprinkling the remaining mozzarella cheese over the top.
10. Sprinkle the paprika evenly over the casserole.
11. Bake in the preheated oven for about 25-30 minutes, or until the cheese is golden and bubbly.
