Slow Cooker Christmas Fruit Cake:
Ingredients:
- 5-6 cups of mixed fruits of your choice (cherries, apricots, raisins, cranberries)
- 2 cups chocolate milk or Frappuccino/coffee milk
- 2 cups of self-rising flour
Instructions:
1. Soak the mixed fruit in milk for at least 24 hrs. You can also do this for several days.
2. Line slow cooker with parchment paper.
3. Sieve your flour. Add flour into the mixed fruit mix. Stir to combine.
4. Pour batter into slow cooker.
5. Cover the cooker and set it on low for 6-7 hours. It's done when you can insert a toothpick in the center and it comes out clean.
6. Once the 6 hours have passed, use a knife to loosen the edges of the cake and carefully flip it over to remove from the slow cooker.

7. Allow the cake to cool before slicing and serving.
