Parmesan Meatloaf in Loaf Pan:
Ingredients:
2 pounds lean ground meat (we like doing half turkey and half beef)
2 large eggs
1/4 cup breadcrumbs
1/2 teaspoon each of basil, oregano, thyme
2 cloves minced garlic
1 diced onion
1/2 cup marinara sauce
1/2 cup grated Parmesan cheese
1/2 cup Italian cheese mix
Salt and pepper to taste
Instructions:
1. Preheat the oven to 350°F.
2. In a large mixing bowl, combine the lean ground beef and lean ground turkey.
3. Add the eggs, bread crumbs, oregano, basil, thyme, minced garlic, minced onion, salt, pepper, and grated Parmesan cheese to the bowl. Mix to combine all the ingredients.
4. Press the mixture evenly into a loaf pan.
5. Spread marinara pasta sauce over the top of the meatloaf.
6. Bake in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
7. In the last 5-10 minutes of baking, sprinkle the Italian cheese mix over the top of the meatloaf and let it melt.
