Imagine the sweet and comforting aroma of freshly baked cinnamon bread wafting through the air, embracing your senses on a peaceful weekend morning. It's a scent that has the magical ability to bring a smile to anyone's face, and the taste? Well, it's nothing short of divine. Warm, fluffy, and kissed with just the right touch of cinnamon, this classic treat has been cherished for generations.
My very first encounter with cinnamon bread was a revelation during a childhood adventure at a rustic countryside inn. I remember the innkeeper, a jovial elderly woman with a twinkle in her eye, inviting me into her quaint kitchen, where the heartwarming magic took place. We spent hours together, crafting this delightful bread from scratch. Flour, sugar, and cinnamon danced in harmony under her wise guidance. Those hours were filled with laughter, storytelling, and shared secrets, making it an unforgettable introduction to the world of cinnamon bread. Although I never returned to that inn, I've carried the memory of that special day with me, and now, I recreate this cherished recipe to keep that magical connection alive.

Cinnamon Bread Recipe
Ingredients:
2 cups of all-purpose flour
1 teaspoon of salt
2 teaspoons of baking powder
½ teaspoon of baking soda
1 cup of granulated sugar
2 eggs
1 cup of buttermilk
¼ cup of vegetable oil
1½ teaspoons of ground cinnamon
2 teaspoons of pure vanilla extract
Topping:
2 tablespoons of granulated sugar
1 teaspoon of ground cinnamon
2 teaspoons of melted unsalted butter
Directions:
1. Begin by preheating your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
2. In a spacious mixing bowl, combine the all-purpose flour, salt, baking powder, and baking soda thoroughly.
3. In a separate bowl, whisk together the granulated sugar and eggs until they form a creamy consistency. Add the buttermilk, vegetable oil, ground cinnamon, and vanilla extract, and mix thoroughly.
4. Gradually introduce the wet mixture into the dry ingredients, stirring until they just come together. Be cautious not to overmix; a few lumps are acceptable.
5. Pour the batter evenly into the prepared loaf pan.
6. In a small bowl, combine the granulated sugar and ground cinnamon for the topping.
7. Drizzle the melted unsalted butter over the batter in the loaf pan. Sprinkle the cinnamon-sugar mixture evenly on top, and you can even create a decorative pattern with a spatula!
8. Place the pan in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center emerges clean.

9. Once it's done baking, remove the cinnamon bread from the oven and allow it to cool in the pan for approximately 10 minutes. Then, transfer it to a wire rack to cool completely.
Serve the cinnamon bread as you like, either plain or toasted with a generous slather of butter.
