Keto Peach Cobbler Recipe:
Ingredients:
2.5 cups almond flour
½ cup low carb sweetener of your choice
2 eggs
4 ounces softened unsalted butter
8 ounces softened cream cheese
1 tablespoon baking powder
1 teaspoon vanilla extract
For the topping:
16 ounces frozen peaches
4 ounces of melted unsalted butter
½ cup of powdered sweetener
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, combine the softened butter, cream cheese, and ½ cup of sweetener. Mix until smooth.
3. Add 2 eggs and 1 tsp of vanilla extract to the mixture. Stir until well combined. Gradually add in 2.5 cups of almond flour and 1 tbsp of baking powder, mixing until you have a thick batter.
4. Carefully spread the batter in greased 9x13 baking dish.
5. Layer frozen peaches on top. Sprinkle with powdered sweetener and drizzle melted butter on top.

6. Bake in the preheated oven for approximately 45 minutes or until the top is golden brown, and the cobbler is set.
Note: Leftovers can be refrigerated for up to 3 days and reheated before serving.
