Recipe: Holiday Brunch Casserole
Ingredients:
4 cups frozen shredded hash brown potatoes, thawed
1 cup biscuit/baking mix
3 cups milk
1 pound pork sausage, cooked and drained
1/2 pound cooked and crumbled bacon strips
1 diced green onion
1 diced green pepper
2 cups shredded cheddar cheese
4 large eggs
Salt to taste
Instructions:
1. Combine hash browns, cooked bacon, sausage, onion, and bell pepper in a large bowl, and stir in 1 cup of cheese. Transfer this mixture to a greased 9x13 baking dish.
2. In another bowl, whisk together eggs, milk, baking mix, and salt until well blended. Pour this mixture over the ingredients in the baking dish. Sprinkle with the remaining cheese.
3. Cover and refrigerate the casserole overnight.
4. Preheat the oven to 375°F (190°C). Remove the casserole from the refrigerator while the oven heats.
5. Bake uncovered for 30-35 minutes or until a knife inserted in the center comes out clean.
Let it stand for 10 minutes before cutting and serving. Enjoy!
