Ingredients:
- 2 lbs of beef chuck roast, trimmed and cut into chunks
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (28 oz) of crushed tomatoes
- 1/4 cup of red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 2 bay leaves
- Olive oil
- Fresh parsley for garnish (optional)
- Grated Parmesan cheese for serving (optional)
Instructions:
1. Season the beef chunks with salt and pepper.
2. In a skillet over medium heat, add a splash of olive oil and brown the beef chunks on all sides. Transfer the browned beef to the slow cooker.
