Broccoli Chicken Divan is a classic comfort dish that combines the rich flavors of chicken, broccoli, and a creamy cheese sauce. Traditionally baked in the oven, this version of the recipe has been adapted for ease and convenience using a slow cooker. The origins of Chicken Divan are often associated with the Divan Parisien Restaurant in the Chatham Hotel in New York City where it was reputedly first created. This cozy casserole became popular in the mid-20th century as a convenient one-dish meal that could bring the family together around the dinner table.
When serving your Slow Cooker Broccoli Chicken Divan, think about balancing the richness of the dish with lighter sides. A simple green salad dressed with a vinaigrette or some steamed green beans are excellent choices as they offer a crisp contrast to the creamy, comforting main course. For those who like a carb companion, a side of fluffy white rice or a loaf of crusty bread can be perfect for soaking up the delicious sauce. Consider a light white wine, like a Chardonnay, to pair with the meal as it can complement the creamy cheese sauce beautifully.

Slow Cooker Broccoli Chicken Divan
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 cups fresh broccoli florets
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1 teaspoon lemon juice
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon curry powder (optional)
- Salt and pepper to taste
- Buttered breadcrumbs or crushed crackers (optional) for topping
Instructions:
1. Begin by lightly greasing your slow cooker's insert with butter or cooking spray to prevent sticking.
2. Place the chicken breasts in the slow cooker and season them with salt and pepper.
3. In a medium-sized bowl, mix together the condensed cream of chicken soup, mayonnaise, sour cream, lemon juice, curry powder (if using), and half of the shredded cheddar cheese. Spread this mixture evenly over the chicken.
4. Next, add the fresh broccoli florets on top of the chicken and sauce mixture.
5. Cover the slow cooker and set it to cook on low for 5 to 6 hours, or on high for 3 to 4 hours until the chicken is cooked through and the broccoli is tender.
6. Once cooked, sprinkle the remaining cheddar cheese over the top and cover for an additional 20 minutes or until the cheese melts.
7. For a crunchy topping, you can briefly broil buttered breadcrumbs or crushed crackers in the oven until golden brown and sprinkle them over the dish just before serving.
