Serving Suggestions:
Nothing complements this Slow Cooker Taco Soup like a side of crunchy tortilla chips, a dollop of sour cream, some shredded cheddar cheese, and a handful of fresh cilantro on top. If you're feeling fancy, why not add a side of fluffy Spanish rice or a crisp green salad? Or keep it simple and serve with a warm piece of cornbread drizzled with honey. Slow Cooker Taco Soup
Servings: 6-8
Ingredients:
- 1 lb ground beef or turkey
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 can of corn, undrained (15 oz)
- 1 can of black beans, drained and rinsed (15 oz)
- 1 can of kidney beans, drained and rinsed (15 oz)
- 1 can of diced tomatoes, with juice (15 oz)
- 1 can of green chilies (4 oz)
- 2 cups beef or chicken broth
- 1 packet of taco seasoning (or 2 tbsp homemade blend)
- 1 packet of ranch dressing mix (optional but recommended)
- Salt and pepper to taste
Directions:
1. In a skillet over medium heat, brown the ground meat with the diced onion and minced garlic until the meat is fully cooked; drain off any excess fat.
2. Transfer the browned meat and onions to the slow cooker.
3. Add the corn, black beans, kidney beans, diced tomatoes, green chilies, and both packets of seasoning to the slow cooker.
4. Pour in the broth and give it a good stir to mix everything together.
5. Set your slow cooker to low and let it simmer all the goodness together for about 6 hours. If you're in a bit of a hurry, cooking it on high for 3-4 hours works just as well.
6. Before serving, taste for seasoning and adjust with a little salt and pepper if needed.
Variations & Tips:
- Make it vegetarian by skipping the meat and adding an extra can of beans or some lentils.
- For a bit more heat, throw in some diced jalapeños or a pinch of red pepper flakes.
- It freezes beautifully, so go ahead and make a double batch to save yourself some time on another night.
- Get the kids involved by letting them pick and add their favorite toppings.
- If you have fresh herbs from the garden, go ahead and toss a handful in to brighten the flavors even more.
