Slow Cooker Million Dollar Spaghetti
Servings: 8
Ingredients:
- 1 pound of ground beef
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 24 ounces of marinara sauce
- 8 ounces of cream cheese, softened
- 2 cups of cottage cheese
- 1/4 cup of sour cream
- 1 cup of shredded mozzarella cheese
- 1 cup of shredded cheddar cheese
- 1 teaspoon of Italian seasoning
- 16 ounces of spaghetti noodles, cooked al dente and drained
- Salt and pepper to taste
- Non-stick cooking spray
Directions:
1. In a skillet over medium heat, brown the ground beef with the onion and garlic until the beef is fully cooked. Drain the excess fat and stir in the marinara sauce. Season with salt and pepper. Set aside.
2. In a mixing bowl, combine softened cream cheese, cottage cheese, sour cream, and Italian seasoning until well blended.
3. Grease the inside of your slow cooker with non-stick cooking spray.
4. Spread a thin layer of the meat sauce on the bottom of the slow cooker.
5. Place half of the cooked spaghetti noodles over the sauce.
6. Spread half of the cheese mixture over the noodles. Then layer with half of the remaining meat sauce.
7. Repeat layers once more with the remaining noodles, cheese mixture, and meat sauce.
8. Top off with the shredded mozzarella and cheddar cheeses.
9. Cover and cook on LOW for 4 hours, until the flavors are well combined and the cheese is melted to perfection.
10. Once done, let it sit for about 20 minutes before serving to let the spaghetti set up a bit – it’ll make serving so much easier!
Variations & Tips:
For those in the family who might be a little more adventurous, you can add in some sliced mushrooms or black olives to the meat sauce. If you're serving vegetarians, simply leave out the beef and add a layer of sautéed spinach or zucchini instead. If you want a lighter version, you could swap out the cream cheese and sour cream for their low-fat counterparts and use lean ground turkey instead of beef.
