Back in the day, you'd find me wandering around the busy markets with my mama, discovering the vibrant colors and sweet scents of fresh produce. It was during one of these outings that she introduced me to the delightful combination of peaches and peppers. Inspired by those memories, I decided to blend that sweet and spicy kick with chicken to create this Jalapeno Peach Chicken dish. It’s a perfect reflection of summer’s end, capturing the warmth of the season in a comforting meal. You'll want to make this when you crave a dish that’s both hearty and tinged with a hint of nostalgia.
This dish pairs wonderfully with a side of fluffy, buttered rice or cornbread to soak up the delicious sauces. I also enjoy serving it with a fresh green salad dressed lightly with olive oil and lemon to cut through the richness. On cooler evenings, alongside some roasted vegetables, it brings warmth to the dinner table, enveloping the room with its inviting aroma.

Jalapeno Peach Chicken
Servings: 4 servings
Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 large peach, pitted and sliced
2 jalapenos, seeded and finely chopped
1 small red onion, chopped
2 cloves garlic, minced
1 cup chicken broth
1 tablespoon honey
2 tablespoons white vinegar
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Directions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium heat.
3. Add chicken to the skillet and cook until golden and no longer pink in the center, about 6 minutes per side. Remove from skillet and set aside.
4. In the same skillet, add the red onion and minced garlic. Saute until the onion becomes translucent.
5. Add the chopped jalapenos and peach slices to the skillet, cooking until they are just softened.
6. Pour in the chicken broth, honey, and white vinegar. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes to meld the flavors together.
7. Return the chicken to the skillet. Cover and simmer for another 10 minutes, or until the chicken is thoroughly heated and the sauce has slightly thickened.
8. Taste and adjust seasoning with additional salt and pepper, if needed.
9. Serve the chicken garnished with chopped cilantro.

Variations & Tips
For a smokier flavor, you can grill the peaches and jalapenos before adding them to the sauce. If you prefer a creamier sauce, stir in a splash of cream or dollop of Greek yogurt towards the end of cooking. For those who love a bit more heat, don't hesitate to throw in an extra jalapeno or two.
