Servings: 24 crackers
Ingredients
2 cups almond flour
1/3 cup granulated erythritol
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 large egg
1 tsp vanilla extract
3 tbsp unsalted butter, melted
Directions
1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix together almond flour, erythritol, cinnamon, baking powder, and salt.
3. In another bowl, whisk the egg with vanilla extract and melted butter.
4. Combine the wet and dry ingredients until a dough forms. If the dough is too sticky, add a bit more almond flour.
5. Place the dough between two pieces of parchment paper and roll out to about 1/8 inch thickness.
6. Remove the top parchment paper and trim the dough into rectangles or squares using a knife or pizza cutter.
7. Using a fork, poke holes into the cut dough to resemble traditional graham crackers.
8. Transfer the parchment with the cut dough onto your prepared baking sheet.
9. Bake in the preheated oven for about 20-25 minutes or until golden brown.
