Honey Garlic Chicken Fried Rice
Servings: 4 servings
Ingredients
2 cups cooked rice (preferably day-old)
1 lb chicken breast, cubed
2 tablespoons vegetable oil
1 large onion, finely chopped
2 cloves garlic, minced
1 cup frozen peas and carrots, thawed
2 eggs, lightly beaten
3 tablespoons soy sauce
2 tablespoons honey
1 teaspoon minced fresh ginger
Salt and pepper to taste
2 tablespoons green onions, chopped for garnish
Sesame seeds, for garnish (optional)
Directions
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed chicken breast and season with salt and pepper. Cook until the chicken is golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining oil and sauté onions until they're translucent. Add the garlic and ginger and cook for another minute, until fragrant.
Increase the heat to high and add the cooked rice, peas, and carrots. Stir-fry for a couple of minutes until the veggies are just beginning to soften.
Push the rice mixture to one side of the skillet. Pour the eggs onto the other side and scramble until just set.
Mix the scrambled eggs into the rice and vegetables.
Return the cooked chicken to the skillet. Drizzle the soy sauce and honey over the top. Stir everything together and cook for another 2-3 minutes, ensuring the dish is heated through.
Season with additional salt and pepper if needed. Garnish with chopped green onions and sesame seeds before serving.
