As someone who juggles a busy schedule but loves to come home to a comforting meal, I’m always on the lookout for effortless yet flavorful dishes. Today, I’m sharing a slow cooker recipe that’s a guaranteed hit for those chilly evenings: Garlic Parmesan Italian Chicken. This dish is inspired by classic Italian flavors, made simple with the help of a slow cooker. It's the perfect recipe when you need something hearty but don't have the time to be hands-on in the kitchen.
This creamy Garlic Parmesan Italian Chicken pairs wonderfully with a range of sides. For a lighter meal, serve it over a bed of fresh greens or with steamed vegetables like broccoli or asparagus. If you’re in the mood for something heartier, it goes perfectly with mashed potatoes, or for a low-carb option, try cauliflower mash. Don't forget a crusty piece of bread to soak up all that delicious sauce!

Slow Cooker Garlic Parmesan Italian Chicken
Servings: 4
Ingredients
4 boneless, skinless chicken breasts
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 tablespoon olive oil
4 cloves garlic, minced
Directions
Place the chicken breasts in the bottom of the slow cooker.
Sprinkle the Italian seasoning, garlic powder, salt, and pepper over the chicken.
In a bowl, mix the chicken broth, heavy cream, grated Parmesan, and minced garlic. Pour this mixture over the chicken in the slow cooker.
Cover and cook on low for 6-8 hours or on high for 4-6 hours, until the chicken is thoroughly cooked and tender.
Once cooked, you can thicken the sauce with a slurry of cornstarch and water if desired. Drizzle the sauce over the chicken and sprinkle with fresh parsley before serving.

Variations & Tips
To switch things up, you can add some sundried tomatoes or green olives into the mix for an extra burst of flavor. Those who enjoy a bit of a crunch might want to sprinkle on some toasted pine nuts just before serving. And for those busy days, feel free to substitute boneless, skinless chicken thighs for the breasts; they’re just as delicious and tend to be even more forgiving in the slow cooker.
