Spring Veggie Loaded Chicken Potato Casserole

2 tablespoons olive oil
1 lb chicken breasts, diced
3 cups potatoes, peeled and cubed
1 medium onion, chopped
2 garlic cloves, minced
1 cup carrots, sliced
1 cup asparagus, chopped
1 cup peas
1 cup broccoli florets
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour
2 cups chicken broth
1 cup milk
1/2 cup grated cheddar cheese
Directions
1. Preheat the oven to 400°F (200°C).
2. Heat the olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through. Remove chicken and set aside.
3. In the same skillet, add the onion, garlic, and potatoes. Sauté until the onions are translucent and potatoes start to soften.
