1 store-bought pie crust or homemade crust
1 cup ricotta cheese
1 cup fresh spinach, chopped
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
3 large eggs
1 cup half-and-half or heavy cream
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
Directions
1. Preheat your oven to 375°F (190°C).
2. Press the pie crust into a 9-inch pie dish, trimming any excess. Prick the bottom and sides with a fork. Bake for 10 minutes, then set aside to cool.
3. Heat the olive oil in a medium skillet over medium heat. Add the chopped onion and garlic; cook until softened and fragrant, about 5 minutes. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.
4. In a large mixing bowl, whisk together the ricotta cheese, eggs, and half-and-half until smooth. Stir in the mozzarella, Parmesan, nutmeg, salt, and black pepper.
