Ingredients
2 lbs ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup milk
2 large eggs
1 small onion, finely chopped
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
1 tsp salt
1/2 tsp black pepper
1/4 cup ketchup
1/4 cup grated mozzarella cheese (optional)

Directions
1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, eggs, onion, garlic, oregano, basil, salt, and pepper. Mix until well combined.
2. Shape the mixture into a loaf shape and place it in the slow cooker.
3. Spread the ketchup evenly on top of the meatloaf.
4. Cover and cook on low for 6-7 hours, or until the meatloaf reaches an internal temperature of 160°F (70°C).
5. If using, sprinkle the mozzarella cheese on top in the last 15 minutes of cooking.
6. Once done, let the meatloaf rest for a few minutes before slicing and serving.

For a leaner option, you can substitute ground turkey or chicken for the ground beef. To add some veggies into the mix, finely grated carrots or chopped spinach blend in nicely without altering the flavor too much.
