Slow Cooker Peanut Butter Fudge
Servings: 24 pieces
Ingredients
2 cups of granulated sugar
1/2 cup of unsalted butter
1/2 cup of whole milk
1 teaspoon of vanilla extract
3/4 cup of creamy peanut butter
2 cups of powdered sugar
Non-stick cooking spray (for greasing the slow cooker)
Directions
1. Grease the inside of your slow cooker with the non-stick cooking spray.
2. In a medium saucepan, combine the granulated sugar, unsalted butter, and milk. Cook over medium heat, stirring constantly until the mixture comes to a boil.
3. Once it reaches a boil, continue to stir and cook for another 2-3 minutes until the sugar is completely dissolved and the mixture is smooth.
4. Pour the hot mixture into the greased slow cooker.
5. Add the vanilla extract and creamy peanut butter to the slow cooker. Stir until the peanut butter is fully melted and incorporated.
6. Gradually add the powdered sugar, stirring constantly until smooth and well combined.
7. Cover the slow cooker, set it to low, and let it cook for about 30 minutes. Stir occasionally to prevent sticking and ensure even cooking.
8. After 30 minutes, give the fudge one final stir and transfer it to a lined 8x8 inch baking dish.
9. Let it cool completely at room temperature, then refrigerate for at least 2 hours or until firm.

Variations & Tips
For a bit of a twist, you can try adding half a cup of mini chocolate chips or chopped nuts to the fudge just before it sets. If you have some in the house who prefer an extra layer of decadence, drizzle melted chocolate over the top before refrigerating. For a dairy-free version, substitute the butter with a plant-based alternative and use a non-dairy milk.
