Servings: 12

Ingredients
2 cups almond flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 large eggs
1 cup shredded mozzarella cheese
1/4 cup sour cream
12 small mozzarella balls (about 1 inch in diameter)
2 tablespoons melted butter
1 teaspoon dried parsley, for garnish (optional)
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 large eggs
1 cup shredded mozzarella cheese
1/4 cup sour cream
12 small mozzarella balls (about 1 inch in diameter)
2 tablespoons melted butter
1 teaspoon dried parsley, for garnish (optional)
Directions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, combine the almond flour, baking powder, salt, garlic powder, and onion powder.
In a separate bowl, whisk together the eggs, shredded mozzarella cheese, and sour cream.
Add the wet ingredients to the dry ingredients and mix until well combined. The dough will be a bit sticky.
Take a small amount of dough and flatten it in your hand. Place a mozzarella ball in the center and wrap the dough around it, forming a small ball. Repeat until all the dough and mozzarella balls are used.
Place the biscuit bombs on the prepared baking sheet. Brush the tops with melted butter.
Bake for about 15-18 minutes or until the biscuit bombs are golden brown.
Allow them to cool slightly before serving. Sprinkle with dried parsley if desired.
Variations & Tips

For a little extra flavor, you can add some finely chopped herbs like rosemary or thyme to the dough. If you want a bit of a kick, try adding a pinch of cayenne pepper. For a different cheesy filling, you could experiment with other cheeses like cheddar or pepper jack. These biscuit bombs also freeze well, so you can make a big batch and reheat them in the microwave or oven for a quick snack or side.
