These Feta Phyllo Bites with Hot Honey are one of my favorite quick and easy appetizers to whip up when I'm hosting friends on a busy weeknight. The crispy phyllo dough paired with the creamy, tangy feta and a touch of sweet and spicy hot honey is just irresistible. This recipe originated from my love of Mediterranean flavors and the convenience of using a muffin tin to create perfectly portioned bites. It's a great way to impress your guests without spending hours in the kitchen.
These Feta Phyllo Bites pair beautifully with a simple green salad tossed in a light vinaigrette, or serve them alongside a fresh fruit platter for a well-balanced appetizer spread. For a more substantial meal, you could complement these bites with grilled chicken skewers and a side of tzatziki sauce for dipping.

1 package of phyllo dough (thawed)
1 cup crumbled feta cheese
1/4 cup cream cheese (softened)
1 tablespoon fresh dill (chopped)
1 teaspoon lemon zest
Salt and pepper to taste
1/4 cup butter (melted)
2 tablespoons hot honey
Directions
1. Preheat your oven to 350°F (175°C) and grease a muffin tin lightly with cooking spray.

5. Spoon about a tablespoon of the cheese mixture into each phyllo cup.
6. Bake for 15-20 minutes, or until the phyllo is golden and crispy.
7. Remove from the oven and allow to cool slightly before drizzling each bite with hot honey.
8. Serve warm and enjoy!

Variations & Tips
For a different flavor profile, try using goat cheese instead of feta, or mix in some sun-dried tomatoes and olives for a more intense Mediterranean flair. If you prefer a less spicy option, regular honey or even a balsamic glaze can be used as a topping. To save time, you can prepare the cheese filling the night before and keep it in the fridge until you're ready to assemble and bake the bites.
