Let's admit it, friends – life gets really busy sometimes, especially when you're trying to juggle work and personal passions. That's why I've put together this Harvest Sheet Pan Dinner using chicken apple sausage slices. This recipe is perfect for those crisp autumn evenings when you want something hearty and healthy but don't have hours to spend in the kitchen. It all started when I realized I had a bunch of leftover fall veggies and some chicken apple sausages, and voila! A new go-to weeknight dinner was born. It's super easy to throw together, and the clean-up is a breeze since it all roasts on one pan.
This Harvest Sheet Pan Dinner is a meal in itself, packed with protein, veggies, and all those warm fall flavors. But if you’re looking to add a bit more to your plate, it pairs wonderfully with a side of crusty bread or a light, crisp salad. You could also serve it over a bed of quinoa or brown rice if you’re craving some extra grains. A glass of your favorite cider or a chilled white wine wouldn’t hurt either!

4 chicken apple sausage links, sliced into rounds
2 medium sweet potatoes, peeled and cubed
1 large red onion, sliced

2 apples, cored and sliced
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary

Salt and pepper to taste
Directions
Preheat your oven to 400°F (200°C).
On a large sheet pan, scatter the sweet potatoes, red onion, Brussels sprouts, and apple slices.
Drizzle the olive oil over the veggies and apples, then sprinkle on the thyme, rosemary, garlic powder, salt, and pepper. Toss everything to ensure even coating.
Add the sliced chicken apple sausage to the pan, arranging it evenly among the veggies.
Roast in the preheated oven for 25-30 minutes, or until the veggies are tender and the sausage is browned.
Halfway through roasting, give everything a good stir to ensure even cooking.
Serve hot, straight from the pan!

Variations & Tips
Feel free to mix and match the veggies based on what you have on hand. Butternut squash, carrots, or parsnips would be great additions. If you prefer a different type of sausage, go for it! Turkey or pork sausage would work just as well. For a bit of extra sweetness, drizzle a little maple syrup over everything before roasting. And for those who like a bit of heat, a sprinkle of red pepper flakes would do the trick. This dish is very forgiving and versatile – the perfect canvas for your culinary creativity!
