Polish Potato Soup (Zupa Ziemniaczana)

6 medium potatoes, peeled and diced
1 large onion, chopped
3 carrots, sliced
2 celery stalks, sliced
4 cups chicken broth
1 cup milk or heavy cream
4 slices bacon, chopped
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried marjoram
2 tablespoons chopped fresh parsley
Directions
1. In a large pot, cook the bacon over medium heat until it becomes crispy. Remove bacon and set aside, leaving the drippings in the pot.
2. Add butter to the pot. Once melted, add the chopped onion, carrots, and celery. Cook until the vegetables are soft, about 5-7 minutes.
3. Add the diced potatoes to the pot along with chicken broth. Bring to a boil, then reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.
4. Use a potato masher to slightly mash some of the potatoes in the pot, which helps to thicken the soup.
5. Stir in the milk or heavy cream, salt, pepper, and dried marjoram. Allow the soup to simmer for another 5 minutes.
6. Ladle the soup into bowls and sprinkle with the reserved crispy bacon and chopped parsley before serving.
