2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
16 oz fresh spinach (or two 10 oz packages of frozen spinach, thawed and drained)
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup breadcrumbs
1 tablespoon butter, melted

Directions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
